Jack and Jennie Hu specialize in what they call “gourmet Chinese” at their Silver Pond.
“Our restaurant is different because the owner also is the chef,” says Jennie Hu. Husband Jack does most of the cooking, from hand-shaping the dumplings to crafting special sauces for dishes he concocts.
Jack grew up in Taiwan and Jennie grew up in Vietnam, where her Chinese parents fled to escape the Communists in China.
The couple met in Colorado Springs and married 21 years ago. He was a chef, but she had never worked in the business till they opened the restaurant 13 years ago.
Customers love the restaurant’s elegant décor, but they love more the avocado-shrimp appetizer, the tender salt-and-pepper calamari and the scallion pancakes. Favorite dishes include strawberry chicken or scallops and shrimp in the house special garlic sauce.

“We make everything fresh and from scratch. We make egg rolls fresh every day. Nothing is fried twice. We serve brown rice as well as steamed and fried. We have a large vegetarian menu. All our meats are best quality and trimmed of fat. We use white meat chicken in most of our chicken dishes,” she says, ticking off the things that make this place special.
