SHANGRI-LA
Hear that crackle? It’s a sizzling seafood platter being whisked to your table at Shangri-La. Hot pots and hot plates are a specialty of the house and will get your attention even before you taste the sumptuous dish.
This is one of the things that Doug Pua and Ailene Ting brought with them to Shangri-La. The business partners were the original owners of Bamboo Court, which gained rave reviews for 10 years before they sold it – wanting to try a less demanding business. They missed it, so they opened Shangri-La in 2003.
Pua, originally from the Philippines, came to California in 1986. A year later, he moved to Colorado, where he had friends. Ting, who is Taiwanese, came to the United States in 1975 with her family, attended high school and college in Texas, then moved to Colorado in 1987 also. That’s when they met, working at – what else? – a Chinese restaurant.
They shared a vision of an upscale Asian restaurant with linen tablecloths, elegant décor, and attentive service. That’s what gained them their reputation and why West-siders followed them all the way out to Briargate.
Besides their signature “sizzling” dishes, their
most unusual dish probably is the walnut prawns.
“When people try it, they just go crazy for it,” Pua says.
They’re also famous for their delectable crab Rangoon (wonton) appetizers – which use real crab.
“Whatever we do, it is fresh and best quality,” says Ting. “We put our hearts into this business and our customers see that.”
HUNAN SPRINGS
Mei Chung knows what she likes and makes what she knows: Hunan- and Szechuan-style Chinese food.
She grew up in Taiwan but came to the United States in 1982. She moved to Colorado because she knew friends here.
“Then, there were only a few Asian restaurants in Colorado Springs,” she recalls. “Now, there are more than 100.”
